Message from Kamado Joe Founder & President, Robert “Bobby” Brennan.

"Like many of you, I’m passionate about outdoor cooking. Over the years, I’ve cooked on everything from high-end stainless steel gas grills to inexpensive briquette charcoal grills. If those were my only choices I would pick the latter for one simple reason–the taste. There is nothing better than the mouth- watering taste of charcoal grilled food. Fortunately there is a better option– the Kamado Joe.

My passion for that signature taste led me to the Kamado style of cooking. With Natural Lump Charcoal, these ceramic grills are the prevailing choice for cooking flexibility and temperature range.

After using a Kamado grill for years I decided to design one with better materials and offer it at a competitive price. That was the start of the Kamado Joe Company, and today my passion for that signature taste still drives the innovation I put into all of our grills and accessories.

Kamado Joe BBQs make food taste better, because they are ceramic and act like an insulator to make food incredibly juicy and tender. Our BBQs only use 100% natural lump charcoal, which infuses a true charcoal flavor like cooking over a wood fire.

An Oven, Stove, BBQ and Smoker

Kamado Joe BBQs allow you to smoke, bake, roast, BBQ and sear with a simple adjustment to the air flow and by using direct or indirect heat. Not to mention a cooking range as low as 82°C to over 400°C, which most BBQs cannot achieve.

Ready to Cook in 15 Minutes

A common misconception is that our BBQs take a long time to heat up. The truth is that Kamado Joe BBQs are ready in as little as 15 minutes; the average time it takes to preheat a gas BBQ. We’re often confused with briquette charcoal BBQs, which can take more than 30 minutes to heat up.

Efficient and Economical

A Kamado Joe BBQ is likely to be the last BBQ you’ll ever need to buy. That’s far more economical than buying a new BBQ every few years. Also, our 100% Natural Lump Charcoal is very efficient and it can be relit for multiple cooking...just close the dampers at the end of the cooking session and the remaining coals will be ready for next time. You can’t do that with gas or briquettes!

Fire. It’s a primitive, powerful magic that draws us in and transforms us. It changes how we cook, how we entertain and how we feel. That magic is at the heart of every Kamado Joe.

Grilling

Grilling at a target temperature of (180–260°C) is the go-technique for quick, delicious and consistent results. Using high-quality charcoal will ensure a steady flame and unmatched flavor in everything you grill, from burgers to corn on the cob.

Searing

Searing delivers the incredible color and flavor you think of when you picture a juicy steak or flame-finished scallops. Timing is key to mastering this high-heat technique. First, you’ll need to give the Kamado Joe enough time to reach the right temperature (260–400°C) for searing—so be sure to light your grill well in advance. With the grill rolling at such high temperatures, searing won’t take long. The goal is to seal in flavor and create a rich, brown outer char without burning the food.

Smoking

Smoking is low and slow (105–135°C) cooking at its finest. The unique shape and design of the kamado keeps meat moist as the heat gently breaks down muscle fibers—all the while infusing it with a deep, smoky flavor. Of course, meat isn’t the only food you can smoke. From cheese to nuts to vegetables, a range of foods benefit from the complex flavor of wood smoke.

Roasting

Juicy and tender on the inside, crisp and flavorful on the outside—this is the work of roasting. This technique is delicious for larger cuts of meat, like whole chicken or pork loin, or for vegetables. The mid-range temperature (135–180°C) harnesses the power of slow, indirect heat to infuse food with wood-fired flavor and tenderness, while delivering enough heat to create a crisp crust or finish. And if you want to experiment with brines or spice rubs, roasting is a great way to show them off.

Baking

More than a grill, the Kamado Joe can become a charcoal-fired oven with just one simple configuration. The kamado’s ceramic walls retain heat and its circular shape promotes superior air circulation—both of which create ideal conditions for baking. Once you have stabilized the temperature, you can bake anything you’d cook in an indoor oven, from wood-fired pizzas to rustic berry cobblers to fresh, crusty bread. Note: to bake pizza, you will need to raise the temperature beyond typical baking temperatures (135–190°C) to 260°C or higher for best results.
